Adulteration of Buffalo Milk with Foreign Fat/ Oil with Special Reference to Palm Oil

Abstract

Detection of palm oil adulteration in milk and dairy products remains challenge for both dairy industry and milk collection centers. Therefore, the main target of this study was firstly, following a simple and rapid chromogenic method to identify foreign fat adulteration even at 10%, Secondly, the determination of the sensitivity of physical and chemical parameters to determine PO adulteration. Thirdly, the determination of adulteration of milk with PO using Gas chromatography FID (GC-FID), the results, showed that chromogenic test succeeded in detecting 25.5% and 23.25% of the examined samples with palm oil (PO) at concentrations of 10% and 25%, respectively. Also, the accuracy of saponification value (SV) appeared to significantly determine PO adulteration at 25% concentration, in comparison to iodine value, peroxide value, refractive index and melting point. Gas chromatography FID (GC-FID) is the most accurate to determine the percent of oil added, although, it is expensive and requires experience. So, in this study, chromogenic methods utilizing filter paper are highly recommended in large-scale laboratories and milk collecting sites, confirmed chemically by SV and finally by GC-FID.
